Sometimes people ask me to describe Saigon (HCMC). The most mesmerizing thing I could think is certainly the traffic, the constant flow of mopeds, motorcycles. People in LA live in their cars, people from Saigon live on their mopeds. That is a big part of the energy of that city without it Saigon won't be what it is. Bep is harvesting new vintage in Burgundy!

End of September- beginning of October it is the period called les vendanges in France -Wine harvest. This year our Sous Chef Marc Arthur Baralla went back home in Bourgogne- Burgundy- home of the Pinot Noir. That region is mainly known for the delicate taste of the Pinot Noir like Romanee Conti, Gevrey Chambertin, Chambolle Musigny ( vineyards I used to harvest when I was teenager). However Marc went back to his roots in the terroir he grew up of Chassagne Montrachet and Massagne/Santenay. He harvested in some exquisite Organic and Biodynamic vineyards. Following his advices, we will serve soon some Biodynamic and Organic wines.

Last May 4th, we participated to the Luckyrice Night Asian Market. We got to share our foods with 2000 people and got to try a lot of foods from different vendors like Asia Dog, An Choi, Ma Peche.... We were serving Mango-cabbage salad, sticky rice with chinese sausage balls and ginger candy?sesame brittle rice pudding. We also got the pleasant opportunity to share a great moment with Ma Peche( Momofuku restaurant in Midtown) and its chef Tien HO. We would like to take the opportunity to thank the staff of Luckyrice for setting up this event and our beloved customers who come everyweek to the Bep to support our efforts.

As some people may know, An, Chef of Bep is a big Motocross( MX) fan and motorcycle fan in general. For the beginning of the 2011 Motocross season, Bep is going to support the Mc Duf Pro team in the OPC motocross Championship! The OPC motocross championship gathers pro-riders and amateurs from US and Europe on some amazing tracks. The philosophy of the OPC championship is a get together between good friends around motocross, good food and great wines. An is going to be back to the OPC races in May and will represent the colors of BEP and of NYC. If you are a motorcycle enthusiast do not hesitate to cheers for An or talk to him regarding MX. It has been such a long time that we did not have updated the blog. We were pretty busy with a lot of events like food festival and also with the biggest of our life...our wedding me ( An Nguyen Xuan) and Janis Bui just got married in France in end of July. Here are few pictures of the last food festival we did, it is called Luckyrice Food Festival, the event was hosted by David Chang (owner/chef of Momofuku). Luckyrice replicated a night market like we commonly find in Asia and wanted to expose New Yorkers to the experience of a night food market like in Asia. It gathers a diversity of food stands from Chinese, Vietnamese, Malay, Korean.... It was a great event and it gathers so many people. We had so much fun to do it and we hope to redo it again next year.

Bun Bo Hue

The Special this week is Bun Bo Hue. It is a spicy beef noodle soup! Bún bò Huế originated in the old imperial capital of Central Vietnam, Huế. The broth is prepared by cooking beef bones for a long period of time, as well as a large variety of different spices including lemon grass and chili. Shrimp paste is also a very important ingredient. My favorite part of that dish is the pig trotter. That dish is such a comfort food for our cold NY winter by excellence.

It’s true what people say. The restaurant business (especially in NYC) is not easy. But luckily, with great support from our friends, family, and fans like all of you, BEP will be celebrating our ONE YEAR ANNIVERSARY! Yes, one year ago, we started popping up on Mondays inside Simple Café in Williamsburg. We had such a great response that we decided to open Thursday and Friday nights. Monday, January 25th, our special will be a take on an old childhood favorite…Bo nuong vi. Customers will get to wrap and roll their own spring rolls! It’s a fun and interactive way to start a new year with BEP.

At Bep we try to use as much ingredients of the season. In Fall Apples are everywhere so we are integrating some apples in a roll dish- We will call it Goi Cuon Tao- Summer roll with apple- I guess we could it Autumn roll. ( Roll filled with apples, Pork and Shrimp with vermicelli).

What better when it is cold than a good bowl of Beef Stew- We would propose the Vietnamese Beef stew cooked with lemongrass, tomatoes, Star Anise served with Fresh Thai Basil and either toasted bread or rice noodles!

Strolling around Chinatown this week, I noticed the abundance of Pomelos. In Asia Pomelo is the represention of the moon. So I decided to do a salad that I love the Goi Buoi- Pomelo Salad, it is a classic Vietnamese dish. Just need some extra lanterns and the Moon celebration would be completed.

Today I was strolling around Chinatown looking for new exciting ingredient and I found some beautiful starfruit (khe in Vietnamese). I decided that today special would be a starfruit salad. The sour of the starfruit would be balanced with the sweetness of the sauce and the shrimps.

I met last Monday at Bep a guy, his name is Nam. He is a French- Vietnamese like me and it seems he is really into "charcuterie", he is making terrines, rillettes et boudin. Bep is wishing everyone Chuc Mung Nam Moi (Happy New Year). We were open on Lunar New Year's Day. More and more people came to celebrate the beginning of the year of the Ox.

The special dish served on that day was Thit Kho Trung (caramelized braised pork belly) with pickled bean sprouts.

The long awaited BEP is finally having its first opening this MLK day: Monday, January 19th from 11 am to 10 pm.

Simple Cafe, a cozy French eatery, will be taken over by BEP every Monday. For now, it will be open exclusively on Mondays.

I will be taking control of the bep (kitchen in Vietnamese) and will be serving Vietnamese staples like Pho, Hu Tieu, Cha Gio, and Banh Mi.

For a quick bite, I recommend that you grab a Banh Mi (Vietnamese sandwich). BUT, nothing could be better than a nice, hot, steaming bowl of Pho (Tonkin beef noodle soup) or Hu Tieu (Saigon pork and shrimp noodle soup) during this arctic winter...

Every week, I will be posting the menu for the upcoming Monday as there may be changes and specials.
