I met last Monday at Bep a guy, his name is Nam. He is a French- Vietnamese like me and it seems he is really into "charcuterie", he is making terrines, rillettes et boudin. I am a huge fan of boudin noir. Boudin noir is a sausage made out of pig blood. It is delicious especcially with sauteed apples. I hope to try his boudin soon. Please come to check his blog.
